Cooking time

  • Roasting 5 minutes
  • Cooking vegetables 15 minutes
  • Combining: Ten minutes
  • Total time taken: Half an hour minutes

Prepare the Semolina

Roast the Semolina: Toast the semolina in a dry pan over a medium-high flame until it smells nutty and gets a light golden brown. Keep stirring constantly to avoid burning. Once it’s nicely roasted, set it aside.

Cook the Vegetables

  • Heat the Oil

Using a large pan, this process involves pouring the oil and letting it heat up on a medium flame. Add mustard seeds and let them sputter after that.

  • Add Spices and Aromatics

The next items to add are the cumin seeds, urad dal, and curry leaves. Cook them for about 5 seconds or until the cumin seeds begin to turn golden and the urad dal is lightly browned.

  • Cook the Onions and Chili

The next processed step is the addition of onions and green chili that you have chopped. Make sure that you cook the onions until they are soft and are turning slightly brown.

  • Incorporate Ginger and Zucchini 

Put grated ginger and zucchini into the pan. Stir fry for about 3-4 minutes or until the zucchini loses its crunch.

Combine and Cook

  • Add Water and Salt

Then you should pour the water in and put in an adequate amount of salt as preferred. Stir the mixture until it becomes warm and begins to boil.

  • Add Semolina

Slowly and continuously pour the roasted semolina into the boiling water, ensuring the water is constantly stirring to avoid clotting.

  • Cook the Upma

Lower heat to simmering and immediately place the cover on the pan. Stir for about 3 or 4 minutes to ensure that all the semolina has been well combined with the water until a porridge is formed.

  • Finish with Lemon and Cilantro

This skillet must be removed from the stove first: Heat off. Then add the lemon juice and chopped cilantro stirring it very well to incorporate.
