Batter Preparation
Prepare the Zucchini
Start by thoroughly washing the zucchini. Grate it using a coarse grater. Place the grated zucchini in a bowl and sprinkle a pinch of salt over it. Leave it for about 10 minutes to draw out the excess moisture.
Squeeze out Excess water
After 10 minutes, squeeze out the excess water from the grated zucchini by using your hands. It is necessary because excess moisture can make the mixture too wet, making it difficult to fry properly.
Combine Ingredients
Take the chopped zucchini, chickpea flour, chopped onion, green chili, and turmeric powder in a large mixing bowl, coriander powder, cumin seeds, garam masala or red chili powder, and lastly, a pinch of salt as per your taste. Combine all the ingredients vigorously until they are well blended.

Slowly add water to the mixture, a little at a time, while mixing continuously. The batter should be thick enough to hold together but not too stiff. Aim for a consistency that lets you easily scoop and drop a spoonful of the mixture into the hot oil.
